When incorporated into sausage batter, they help raise processing yield and optimise organoleptic quality. The quality of sausages is highly dependent on the water-holding capacity of muscle proteins. During chopping, curing and thermal processing, myofibrillar proteins readily denature and aggregate. This breaks down the original water-trapping network, leading to free-water exudation, considerable weight loss after heating, and resulting in dry, tough and crumbly finished products. As amphiphilic biomolecules with hydrophilic polar head groups and hydrophobic fatty-acid chains, phospholipids are capable of interacting simultaneously with muscle proteins, water and fat within the meat matrix.
During the chopping stage, phospholipids disperse evenly throughout sausage batter. Their hydrophilic moieties bind to polar sites of muscle protein molecules and free-water molecules, whereas hydrophobic fatty-acid segments embed into dispersed fat droplets. Such multi-directional interfacial interaction restrains excessive thermal-induced aggregation of myofibrillar proteins and promotes the formation of a more stable protein-water-fat composite network. The compact network physically immobilises large quantities of free water, reduces moisture separation and fat bleeding upon heating, and consequently increases the final yield of sausages.
Improved water-holding capacity brings direct improvements to eating experience. Sausages with appropriate phospholipid supplementation show enhanced juiciness and softer mouthfeel, avoiding the dry and granular texture caused by serious water loss. Meanwhile, phospholipids stabilise fat globules and prevent oil separation, producing a uniform and compact cross-section structure. They also facilitate flavour-substance release during mastication and elevate overall palatability of finished sausages.
Strict dosage control is required for industrial application. Low addition levels fail to form sufficient interfacial films, so moisture-retaining and emulsifying effects remain limited. Over-dosage will negatively influence product quality, causing overly soft texture, sticky surface, and accelerating lipid oxidation to shorten shelf-life. In real production, phospholipids are mostly used in combination with phosphates, plant proteins or hydrocolloids rather than used alone. Compound application achieves better water-locking performance and allows reduced phosphate usage.
It should be emphasised that phospholipids play an auxiliary functional role. Their moisture-retaining performance is affected by meat raw-material freshness, chopping temperature, curing time, heating regime and batter pH. Defects originating from poor raw-material quality or improper thermal processes cannot be fully offset by phospholipid addition alone. Standardised processing parameters remain fundamental guarantees for stable sausage quality.
Phospholipids improve the water-holding capacity of sausage systems through interfacial interactions among protein, water and fat. They effectively boost finished product yield, reduce moisture and fat loss, and optimise juiciness and tissue texture. With rational dosage and compound formulation design, phospholipids provide a practical technical option for manufacturing high-quality sausages.
