·Fruit Preservation: Phospholipids can be used for fruit preservation. For example, soybean phospholipid-based preservatives, formulated with calcium salts and other additives, form a film on the fruit's surface, inhibiting fungal growth and reducing water loss from the fruit, thereby extending its shelf life.
